Potato Rice at the 2025 China Dingxi Potato Conference

Potato rice technology and products made a stunning appearance at the 2025 China Dingxi Potato Conference.



From July 22nd to 23rd, 2025, the 2025 China Dingxi Potato Conference, themed "Gathering Chains and Clusters, Empowering Innovation, and Accelerating the Construction of a National High Ground for the Development of the Entire Potato Industry Chain," was successfully held in Anding District. Renowned experts, scholars, government representatives, and entrepreneurs from the potato field both domestically and internationally gathered to focus on expanding the scale, improving the quality, extending the chain, and increasing efficiency of the potato industry. They were committed to extending the industrial chain, streamlining the supply chain, and enhancing the value chain, building a new development pattern of comprehensive improvement, full-chain value enhancement, and full-industry integration.


As a highlight of the conference, the Food Science and Processing Research Center of Shenzhen University showcased its innovative achievements in potato staple food—the novel nutritious staple food "Potato Rice" and its latest pilot-scale research product, "Potato Juice Beverage." At the exhibition, these two products attracted a large number of attendees to stop and sample them, receiving unanimous praise. The potato rice technology, developed by Academician Wu Chi's team at the Chinese Academy of Sciences over five and a half years, directly processes fresh potatoes into a low-cost, long-term, and nutritious staple food. This represents a breakthrough from the concept of "whole food processing" to technology and production, successfully transforming coarse grains into refined grains, feed into fodder, and supplementary grains into staple foods. This contributes "Chinese wisdom" to national food security and has formed a series of new productive forces, helping to "secure China's food supply."


Dingxi, known as the "Potato Capital of China," has a long history of potato cultivation. Leveraging its high-altitude and arid natural resources, the city has adhered to a whole-industry chain development strategy, successfully transforming the potato industry into a pillar industry for ensuring food security and increasing farmers' income. This conference featured six exhibition areas with 102 booths, attracting 137 companies and showcasing the achievements of the entire potato industry chain. Through this conference, the "potato rice" presented by the Food Science and Processing Research Center of Shenzhen University injected new vitality into the staple food transformation of potatoes and provided new momentum for promoting the high-quality development of the national potato industry.
